Strawberry Cake with Strawberry Cream Cheese Frosting And A Surprise

Hello World!  I'm so sorry I haven't posted much this week.  I've fallen in love; in love with a paint color.  To be honest, I was a little stuck with the direction my decorating was going.  But, not anymore.  I discovered a new to me paint color and have been busy repainting a chest, spray painting drawer pulls, painting under the bar, and rearranging furniture.  Next up, I'm totally going to repaint my kitchen cabinets.  But, today I'm sharing with you the made from scratch Strawberry Cake with Strawberry Cream Cheese Icing recipe that I used for my husband's birthday. 

Strawberry Cake with Strawberry Cream Cheese Frosting

Ingredients:
2 cups white sugar
1 (3 oz.) package strawberry flavored gelatin
1 cup butter, softened
4 eggs (room temperature)
2 3/4 cups sifted cake flour
2 1/2 teaspoons baking powder
1 cup whole milk, room temperature
1 tablespoon vanilla extract

1/2 cup strawberry puree made from frozen sweetened strawberries

Directions:
Preheat oven to 350 degrees F.  Grease and flour two 9 inch round cake pans. 

In a large bowl, cream together the butter, sugar and dry strawberry gelatin until light and fluffy.  Beat in eggs one at a time, mixing well after each.  Combine the flour and baking powder; stir into the batter alternately with the milk.  Blend in vanilla and strawberry puree.  Divide the batter evenly between the prepared pans. 

Bake for 25 to 30 minutes in the preheated oven, or until a small knife inserted into the center of the cake comes out clean.  Allow cakes to cool in their pans over a wire rack for at least 10 minutes, before tapping out to cool completely.  

Strawberry Cream Cheese Frosting
1/4 cup butter, softened
1 (8 ounce) package cream cheese, softened
1 (10 ounce) package frozen strawberries in syrup, thawed and pureed
1/2 teaspoon strawberry extract
7 cups confectioners' sugar
Freshly sliced strawberries, for garnish

Directions:
In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy.  Beat in 1/4 cup of the strawberry puree and the strawberry extract.  (The rest of the leftover puree can be used in smoothies or on ice cream for a delicious treat.)  Gradually add confectioners' sugar, beating until smooth.  Spread frosting in between layers and on top and sides of cake.  Garnish with fresh sliced strawberries.

  11. My Mother in law and I were just talking about how I need to get a recipe for a good strawberry cake. We had a lovely lady who used to bring a wonderful strawberry cake every year to Christmas but she passed away and took the recipe with her. So I plan on trying this recipe. It looks great. Pinning this to my Cakes board.
