Chocolate Peanut Butter Balls

Hello World!  I think my Mom aka Betty Lou should be my food tester.  She's going through the Make it Pretty Monday link party and pulling out all the recipes that she wants to try.  Today she made #30 Twice Baked Sweet Potatoes from Kitty's Kozy Kitchen.  The verdict, scrumptious!  Tomorrow she's going to make something else from the party.  I'll keep you posted on her kitchen doings from the Make it Pretty Monday party!

Speaking of food and Betty Lou; we celebrated her 82nd birthday.  One of her favorite desserts is Chocolate Peanut Butter Balls.  So, yours truly made a batch.  I got the recipe from Little Lucy Lu.  She calls them Peanut Butter Balls, but I like to call them Chocolate Peanut Butter Balls.

Chocolate Peanut Butter Balls
Ingredients:
1/2 cup unsalted butter, softenend
2 cups creamy peanut butter
1/2 teaspoon vanilla
2 - 3 cups powdered sugar
Chocolate Almond Bark or your Chocolate of choice

Directions:
Stir together the butter, peanut butter, and vanilla.
When that is nice and smooth, add in one cup at a time of the powdered sugar.  Try to get it to the point of not sticky.  Needs to be stiff.  Place in the refrigerator to chill for 30 minutes.

Make balls of the peanut butter mixture and place on wax paper.

Aren't they cute? Once you've made your balls, melt the chocolate in the microwave.  Next, cover the peanut butter balls in the melted chocolate.

The Dedicated Husband was kind enough to take this picture since my hands were a tad busy.  Place the balls back on the wax paper.  I put wax paper on cookie sheets and placed the chocolate covered balls on these to chill in the refrigerator.  No pics of the of the chilled ones.

So easy to make and so easy to eat!  Goes well with a cold glass of milk.

The pretty birthday girl!  We enjoyed a great time celebrating my Mom and topped it off with Chocolate Peanut Butter Balls.

I hope you will give this a try with the holidays coming up.  I think my voice students might get a tin of these for Christmas.

Make it Pretty Monday is rolling right along.  Click here if you want to join in the fun.  I'm still painting, painting, painting.  Also, planning The Dedicated Daughter's 5th birthday party!  I also have some shopping things I need to show you.  Oh, and put up some Fall decor...lol.

Anyhoo, wishing all a grand evening and remember to be kind to one another.

Toodles,
Kathryn
