Pollo Guisado

Hello World!  On a quest to find some really good chicken recipes I ran across this lovely dish that is a staple in the Dominican diet.  Let me introduce Pollo Guisado.  This delicious dish of chicken stewed with vegetables is an indispensable dish to the Dominican cook.  Along with Arroz con Habichuelas (red beans and rice) and a side salad, Pollo Guisado makes up a patriotic lunch called La Bandera, or "The Dominican Flag."  Also, our Puerto Rican neighbors are big fans of Pollo Guisado.  After making this delicious dish, I can see why.  


Here's the recipe followed up by a few pictures that I took along the way. 


Pollo Guisado
6 - 8 chicken pieces, preferably drumsticks and thighs, excess skin removed. 
2 Tablespoons Sofrito (homemade or store bought)
4 carrots, peeled and diced
3 potatoes, peeled and diced
1 can (8 oz.) tomato sauce
Salt and freshly ground pepper, to taste.  Chicken stock or water, as needed.
Fresh cilantro


Place the chicken in a heavy pot.  Coat the chicken with sofrito.  Cover and cook over medium heat, stirring occasionally, for about 15 minutes (until no longer pink).  I cooked mine for about 30 minutes on a little lower heat.  Add veggies and tomato sauce, cover and lower heat to cook at a low simmer for 12 to 15 minutes or until vegetables are fork tender.  


The chicken will create its own broth, but you can add water or chicken stock to keep it moist and allow for more cooking time.  


Add salt and pepper to taste and top with freshly chopped cilantro.  Refrigerate any leftovers.
Serves 4 to 6.

 I used Goya Sofrito.  Sofrito is a cooking base that is delicious. 

 Here are some of the ingredients.  

 I have no counter space right now.  My china hutch was emptied and removed to lay down the flooring in the dining room.  The contents are now sitting on my kitchen counters. 

 Yellow squash that I made to go along side.  

 Mid cooking.  The smell is heavenly! 

  Topped with cilantro alongside a couple of pineapple slices.  Yummy!

She's not only tasty, but pretty as well.  



This is super easy to make.  So, I encourage you, spend a little time in the kitchen and let this dish simmer.  You won't be sorry.

  2. Yummy! I'll have to give this a try- my husband is Puerto Rican and we haven't had this yet... so I'll have to surprise him. :) Although we can't live without Sofrito- it's a must!
